These American cinnamon buns are so soft and fluffy, and I often make them when I feel like I need a really nice treat. I also like to glaze them with a cream cheese frosting to give them that little extra something.

Instructions
Dough
  1. Dissolve the yeast in the tepid water. Set aside for 5 minutes to activate the yeast. Pour the milk or cream into a small bowl and warm in the microwave 1-2 minutes. Add the butter and stir until melted. If you can't get fresh yeast, use 2 teaspoons dried active yeast instead.
  2. Put all the ingredients into a mixing bowl. Use the dough hook attachment and mix for about 2-3 minutes.
  3. Cover with a clean dish towel and leave to rest for 15 minutes. After the dough has had its 15 minute rest, mix on medium speed for 20 minutes. It may look like it needs more liquid, but don’t worry, just continue mixing.
  4. Place the dough in a lightly greased mixing bowl, cover with the dish towel and leave to rise for about 40 minutes or until doubled in size. Turn out the dough onto a floured work surface and roll out to a large rectangle.
Filling:
  1. Brush the melted butter over the dough, then sprinkle with brown sugar, cinnamon and nuts. Starting from one long side, lightly roll up the dough like a Swiss roll.
  2. Using a sharp knife, cut the roll into approx. 12 pieces and arrange, cut side up, on a lined baking tray.
  3. Cover with a clean dish towel and leave to prove for about 20 minutes. Bake in a 180 C/350 F oven for about 15-20 minutes. I use the fan setting.
Frosting
  1. Make the frosting by mixing together all the ingredients, add more lemon juice to taste. As soon as the buns are out of the oven, spread the frosting over the buns.
