Hello everyone, and thanks for all the positive feedback on my new blog! I appreciate it very much.

Friday is here and I was thinking that an overnight pizza dough would fit the bill nicely, perfect for those of you who haven’t got a stand mixer.

This pizza is so fluffy and delicious, and it’s easy to make.

Here is the recipe.

Overnight pizza dough is a dough you don't have to knead. You just have to mix together the ingredients with a spoon, then leave it to rest overnight. The next day you can make a delicious restaurant style pizza, and you don't even need any equipment to make it. I topped this pizza with bolognese sauce and lots of cheese, and personally I like to bake it until the edges are really crisp. Should you have a pizza stone I urge you to use it, but if you don't have one you'll still be able to make an amazing pizza.

Instructions
Overnight pizza dough
  1. Put all the ingredients into a bowl.
  2. Stir to mix, making sure there are no lumps.
  3. Cover with plastic wrap and leave to rest in the refrigerator overnight.
  4. On the next day, dust your work surface with flour and tip out the dough. Use a rubber spatula to fold one side of the dough over to the other.
  5. Do the same thing on the other side.
  6. Then fold the bottom side up, and the top side down.
  7. Fold the dough like this a few times until it looks like a little parcel.
  8. Cover the dough with the mixing bowl turned uside-down, and leave to rest until it gets to room temperature. This will take about 1-2 hours.
  9. Divide the dough into 2 parts, or keep it in one piece if you want one large pizza.
  10. Preheat your oven to the highest possible temperature. If you have a pizza stone or baking steel put it in there as you turn your oven on.
  11. This dough is so fluffy...
  12. Try not to work any more with the dough than necessary, just dust your hands with a little flour and try not to knock the air out.

  1. Put the minced beef, onion, garlic and some salt and pepper into a bowl and mix well.
  2. Fry the mixture until well done, then add the tomato purée and water and stir to mix. Simmer for about 5 minutes on a low heat. Add the basil and check the seasoning.
  3. Spread the bolognese sauce over the pizza bases.
  4. Sprinkle with grated mozzarella, then the parmesan on top. Bake in the preheated oven (my oven is 250 C/480 F). If using a pizza stone this will take about 8 minutes, if you don't use one allow 15 minutes to get a nice crust.
  5. Serve with a salad on the side, if you like. This is so good, especially when enjoyed in the company of lovely people. Bon appétit
