Hello everyone, Saturday night is here and I guess most of you may have some time to relax.

It’s been great reading your comments and feedback regarding Manuelas’s Diner, thank you so much!

I just got back from Oslo, and while I was there several people told me how much they love my Mediteranean dish.

It’s wonderful to be able to inspire people, and your feedback gives me the motivation I need to keep sharing my recipes.

Yesterday I made another favorite of mine, Spaghetti Alfredo.

If you haven’t had this dish before you’ve really missed out on something delicious… The flavor is in the sauce, it’s so yummy!

  1. Melt the butter in a frying pan on a medium heat.
  2. Add the pepper, nutmeg and crushed garlic. Cook on a medium heat for a few minutes, stirring all the time.
  3. Add the cream.
  4. Simmer for a few minutes.
  5. Add the grated Parmesan...
  6. ...and the Romano cheese.
  7. Stir well, still on a medium heat, until everything is melted and smooth.
  8. Cook the spaghetti, I use fresh here. You can of course use regular dried pasta, but fresh spaghetti cooks in just a few minutes.
  9. When the spaghetti is ready, drain and add it to the sauce in the pan.
  10. Stir well and add the parsley. Season with more pepper to taste.
  11. I like to serve this with some crispy bacon. I cook the bacon by arranging the slices on a baking tray, then put it in a 350 F/180 C oven for about 10 minutes. Crumble the crispy bacon and sprinkle over the cheesy pasta.
  12. I like to sprinkle some extra parsley on top. And that's how easy it is to make Spaghetti Alfredo. Bon appétit everyone, I hope you are tempted.

    Hi Manuela! I’m a big fan of your amazing blog, you have great photos and recipes! :)

    I would like to say something about this recipe since I’m Italian :) We don’t actually have this version of the recipe here (the original one was made of “fettuccine”, parmesan and butter only) but it must be tasty as well! And, just because culinary traditions are a big deal here ;), the pasta you have used it’s actually “chitarrine” not spaghetti (you can tell by the shape). Even though the package says spaghetti. I really hope this comment doesn’t bother you! Thank you for sharing your passion! :)
